The Chardonnay vineyards are located on the slopes of Peissy, one of the sub-villages of Satigny. The steep slope of the vineyard here give the vines an optimum amount of sun exposition and soil drainage. This, together with extremely low yields, provides us with concentrated, ripe fruit.
The Chardonnay is fermented in stainless steel tanks and then aged in oak barrels for about nine months. The barrels are medium toasted, which gives the wine subtile and delightful vanilla aromas. Only about one-third of the barrels are new, which keeps the wine from being excessively "oaked".

The bouquet give us notes of ripe pears, mangoes and apples, along with some vanilla. The palate is rich and fruit-forward; the mouthfeel is relatively fat, though still quite fresh. The finish is long and gives us walnut and almond flavours.

Successful pairings include trout, salmon and salt-water fish such as tuna, sea bass, and snapper. It pairs well with lobster, crab and other shellfish, as well as chicken, turkey, and veal.
Cellaring: the 2006 should keep well until 2009-2010.

The Gamaret vineyards are located in Satigny and Bourdigny. This "Geneva grape" is a cross between Gamay (a red) and Reichensteiner (a white) and was originally developed for the "terroir" or environment that we have in Geneva.

The 2007 Gamaret is surprisingly intense in both color and palate. The robe is a brilliant dark burgundy with purple highlights. On the nose, we find black cherries, cassis and licorice, as well as cinnamon, cloves and nutmeg. The tannins are present but rather velvety, giving the wine a nice round mouthfeel. The finish is long and harmonious, with lots of jammy fruit (black cherry and cassis).

Food pairings:
The 2007 pairs well with all red meats as well as barbecued porc and chicken. We particularly like it with grilled lamb and game meats. Because of its spicy qualities, it pairs well with Asian or middle-eastern meat dishes.

Our Cabernet Franc is planted on the "Côtes de Bourdigny" a gently sloping hillside vineyard. It is classified Grand Cru. The wine is entirely hand-crafted, from pruning, crop-thinning and harvesting to winemaking and finally barrel-aging. The low yields (500-600 grams/m2) give us small grapes with concentrated juice and thick skins. These qualities enable us to make a wine that is rich, full-bodied and complex.
The Cabernet Franc is fermented in oak barrels and then aged for another 10 months. It is then bottle aged for another 9 months.

The color is a brillant dark ruby red. The nose gives us rich aromas of black cherry pie, strawberries, caramel and raspberries. There's also a slight hint of vanilla.
On the palate, the wine is wonderfully balanced and has an incredibly smooth mouthfeel with silky tannins and voluptuous ripe fruit. The finish is long and harmonious.
Pairings:
Successful pairings include all game meats, pork, grilled or roasted lamb and beef.
Cellaring: the 2006 should keep well until 2015-2016.
